Chocolate Ganache Orange Cake (Vegan)

Description

Celebrate the love and nurturing spirit of motherhood with our decadent Vegan Chocolate Ganache Orange Cake, specially crafted for Mother’s Day. 

This moist and fluffy orange-infused cake is smothered in a velvety chocolate ganache made with bittersweet chocolate chips and coconut milk.

Orange zest and juice perfectly balance the chocolate taste.

The healthy sweetness comes from coconut palm sugar. This is the perfect way to celebrate mom -- showering her with love, appreciation, and of course, chocolate! 🙂

Ingredients:

  1. 2 Cup of All Purpose Flour 
  2. 1 Cup of Organic Coconut Palm Sugar
  3. ½ Cup of Organic Coconut Milk Powder and ¼  Cup of water to make coconut milk
  4. ½ Cup of Organic Orange Juice Powder and ¼ Cup of water to make orange juice (or ½ Cup of fresh orange juice)
  5. 1 Orange - zesting
  6. ½ Cup of Coconut Oil (or Vegetable Oil)
  7. 1 tsp of Baking Soda
  8. 1 tsp of Baking Powder
  9. ¾ Cup of Hot Water
  10. ½ Cup of Organic Bittersweet Chocolate Chips 
  11. ¼ Cup of Chopped Almonds (or nuts of your choice)

Directions:

  1. Preheat Oven to 350 degrees Fahrenheit and line the parchment paper to the baking tray.
  2. Mix together either coconut or vegetable oil with coconut palm sugar.
  3. Then, add orange juice and hot water. Combine them all together with a whisk.
  4. Sift all purpose flour, baking powder and baking soda on it.
  5. Add fresh orange zest and combine all ingredients together. Avoid over beating.
  6. Place this batter into the baking tray and bake for 30 to 40 minutes. After stipulated time, check with a toothpick to see if the cake is ready. If it comes out clean, you can take out your cake. 

For Chocolate Ganache:

  1. Mix coconut milk powder with water and make a thick coconut milk. 
  2. In a glass bowl, mix bittersweet chocolate chips and coconut milk together, and put this bowl on top of boiling water. 
  3. Once chocolate chips melt, mix well and remove the bowl from hot water.
  4. Place this sauce on top of the orange cake. 
  5. Decorate with chopped almonds or your favorite chopped nuts (optional).
  6. Enjoy with your mother and family!
