Erythritol powder is a sugar alcohol that occurs naturally in some fruits and fermented foods.
Scottish chemist John Stenhouse first discovered it in 1848. In the late 1990s, it was produced commercially through a fermentation process using glucose and yeast.
Erythritol is a sugar substitute because it is almost as sweet as sugar but contains only 0.2 per gram, compared to 4 calories per gram for sugar.
It is also known for its cooling sensation in the mouth, similar to mint. It is often used in sugar-free products such as candy, ice cream, and chewing gum.
It can also be used in baking, as it is stable at high temperatures and does not caramelize like sugar.
It is often used in combination with other sweeteners like stevia, monk fruit, and xylitol to achieve a more natural sweetness.
Suggested Use: Use as a tabletop sugar replacement. Add as desired to recipes, drinks, or baked goods. Use two teaspoons of erythritol to replace one teaspoon of sugar.
