Matcha Lemonade and Spinach Cashew Snacks for St. Patrick’s Day

Second, our cashew-spinach snack is guaranteed to make you reach for more.Â
These are incredibly simple and delicious ways to uniquely celebrate St. Patrick’s Day while getting a nutrition and energy boost simultaneously.
Here’s what you need and how to do it.
Ingredients:
Matcha Lemonade:
- ½ tsp. organic matcha green tea powder
- ½ tsp organic barley grass juice powder
- 1 tsp. organic lemon juice powder or fresh lemon juice
- Organic stevia extract powder (debittered) or sweetener of your choice to taste
- Fine Himalayan salt to tasteÂ
- 1 cup water Â
Spinach cashew snacks:
- 1 cup organic whole cashews
- 1 tbsp organic spinach powder
- 1 tbsp cheddar cheese powder
- ½ tbsp organic lemon juice powder
- Fine Himalayan salt to taste
- Organic black pepper powder to taste
- 2 tbsp coconut oil or oil of choice
- 2 to 4 tbsp water
Directions for lemonade:Â
- Mix matcha powder and barley grass juice powder in a cup of hot water. Whisk or use a frother until both powders are dissolved. Chill the tea in the refrigerator.
- Once the tea has cooled down, whisk lemon juice powder, your sweetener of choice, salt and mix well. Serve the tea cold with some ice.
Note: this makes 1 cup of tea but you can make more and keep it in the refrigerator. Adjust the amount of matcha powder and sweetener as desired.
Directions for Spinach cashews:
- Preheat the oven to 250°FÂ
- In a bowl combine spinach powder, cheddar cheese powder, lemon juice powder, salt and pepper. Add the oil, and 2 tbsp water to the mix, stir to combine until a paste forms. If the mixture is too dry add more tablespoons of water.
- Mix the cashews with the paste until all of the cashews have been evenly coated.
- Spread the coated cashews on a baking sheet lined with parchment paper.
- Bake for 10 minutes, then remove from the oven, stir well and place back into the oven for 10 more minutes or until crispy and golden brown.
- Remove from the oven and while the cashews are still warm, sprinkle some dry spinach powder on top for an extra pop of green color.
- Let the cashews cool completely before serving.
- Enjoy with lemonade!!
