These chocolate mint almond cookies are the best!Â
They are simple and quick to make, no special equipment needed, and they are far healthier than any store bought cookie.
This recipe calls for our organic raw almonds to make almond flour. Simply add the almonds to a food processor and pulse until they form a powder, making sure not to pulse the mixture too much as this will draw out the oils from the almonds.Â
A nutrition superstar, almonds give this recipe a wonderful taste and richness, as well as Vitamin E, calcium, magnesium, potassium, protein, and fiber. Mixing the almond flour with oat flour adds a lighter texture to the cookies.Â
It’s super easy… just use rolled oats and pulse until you have a fine oat flour. Also a nutrition superstar, oats are packed with nutrients as well as beta glucans which means these cookies may not give you the sugar spikes compared to many others.
Yet another nutrition powerhouse, our organic extra rich cacao powder makes these cookies rich and chocolatey, and is packed with vitamins, minerals, essential fatty acids and flavonoids. Combined with our organic coconut palm sugar, which has a sweet, caramel taste it is the perfect sweetener for this recipe and pairs well with the cacao.
This recipe also calls for honey and coconut oil so that the dough can come together into a uniform ball. Try using a refined coconut oil for a neutral flavor, or if you prefer unrefined coconut oil that’s fine too! Just try adding some more peppermint extract to compensate for the flavor.Â
Here’s what you need, and how to make your own tasty mint chocolate almond morsels!
Ingredients:
- 1 cup whole, organic, raw almonds
- ½ cup rolled oats
- 5 tbsp. organic cacao powder
- 3 tbsp. organic coconut palm sugar
- ¼ tsp. fine gourmet himalayan salt
- 4 tbsp. honey
- ½ cup coconut oilÂ
- â…› tsp. peppermint extract
- ¼ cup raw organic walnuts
Coating:
- 1 cup organic bittersweet chocolate chips
- 4 to 5 wafers of organic cacao butter
- â…› tsp. peppermint extract
- ¼ cup chopped almonds and walnuts for topping
Directions:
- Make organic almond and oat flour in the food processor.
- In a large bowl, add almond flour, oat flour, organic cacao powder, organic coconut palm sugar, fine gourmet himalayan salt and stir until there aren’t any large clumps in the mixture.Â
- Add coconut oil, raw premium backyard honey, and peppermint extract, then use your hands to make a dough (be sure not to overwork the dough so that it does not become oily).
- Wrap the dough tightly and chill it for 15 minutes.
- Preheat the oven to 350F and line two cookie sheets with parchment paper.
- Unwrap the dough and place a large piece of parchment paper over the dough and use a rolling pin to roll the dough into a large, uniform, ¼ inch thick circle. This size is important so that they bake evenly and somewhat crispy. Using a 1.5 inch round cookie cutter, cut out each cookie from the dough, then roll out the leftover dough in order to cut out more cookies. Repeat this process until all of the dough is used.Â
- Bake the cookies for 10-11 minutes, making sure to turn them halfway. After removing the cookies from the oven, allow them to cool on the cookie sheet and then transfer to a cooling rack to cool completely before coating in chocolate.
- For coating - Add organic bittersweet chocolate chips to a microwave-safe bowl. Melt the chocolate chips in 30 second intervals, stopping to stir the chips between each. This will help the chocolate to melt evenly and not burn. Once the chocolate chips are mostly completely melted, add the cacao butter wafers and stir until completely smooth. Microwave for 10 seconds more if needed, to this mixture, add peppermint extract and mix well.
- Using a fork, dip cookies into the melted chocolate. Let any excess chocolate drip off before placing the cookie back on the parchment lined baking sheet. Top cookies with chopped almonds and walnuts.
- Place cookies in the fridge or freezer for the chocolate to set, about 30 minutes. Once the chocolate has set, you’re ready to enjoy! (Store leftover cookies in the fridge)Â
